Coconut stuffed idli is a sweet dish mainly prepared during festival of odisha. It is a steamed pitha Made of rice and urad dal batter and stuffing with coconut jaggary mixture . You can enjoy in breakfast.
It goes well with steamed rice ,roti, paratha .

INGREDIENTS OF COCONUT STUFFED IDLI
- Urad dal– 1cup
- Rice – 2cups
- Grated coconut– 1
- Salt as per taste
- Jagarry-3/4cup
- Cardamom powder– 1/2teaspoon

Preparation
Steps of Coconut stuffed idli recipe:
- Wash and soak urad dal and rice separately for 4-5hr Or overnight.
- Grind separately to make smooth paste by adding little water .
- Mix the urad dal batter with hand to make it floppy. Then add rice batter and mix well.

- Cover it overnight.
- Add salt as per taste and mix well.
PREPARE COCONUT STUFFING
- In a bowl add grated coconut, jaggery, cardamom powder, mix well. Or you can stri fry the grated coconut, jaggery, cardamom powder and fry for 5min.
- Grease the idli plate with oil.
- Pour the batter(3/4th) into the idli plates.

- Place spoon full of coconut mixture on the top.

- Steam it in a idli cooker or rice cooker for 10 min.

- Let cool the idli.

- Serve in a serving bowl and enjoy festival.
