Ambula Rai (Dry Mango Raita)

Ambula is dried mango marinated with salt . It is common in Odia kitchen. Ambul Rai is a Authentic odia cuisine which is made with mustard paste,green chilies tempered with punch phutan. Ambula rai is sweet savory side dish for rice and pulao.

Ambul rai is a combination of flavors of sweet,spicy,tangy.

INGREDIENTS

  • Ambula-6-7
  • Mustard seeds-2tablespoons, soaked in water for 30 min
  • Yogurt – 1/2 cup
  • Coconut -3/4 cup, fresh grated
  • Salt: As per taste
  • Jaggery

Tempering:

  • Dry chilies
  • 1 spring curry leaves
  • Pancha Phutana  -1 teaspoon
  • 1/2 inch Ginger, cut into pieces
  • Mustard oil – 2 tablespoon
  • Green chilli-1

Preparation

Steps of Ambul Rai recipe:

1.Grind soaked mustard, green chillies, ginger into coarse paste.

2.Add little water if required. Allow it to rest and add 1 tbs mustard oil.

3.Boil the water add ambul and cook for sometime.

4.In a pan take 1 tbs mustard oil add phutan dry chili,chili,curry leaves.then add mustard paste turmeric powder,chili powder,salt  .cook sometime or till the raw smell of mustard disappeared.

5.Add boiled ambul  and 1 tbs jagarry ,mix properly.cook for sometime.

6.After 5min cook ,swich off the flame and add curd mix properly.

7.Garnish with fresh coconut.

Serve with  steamed rice and enjoy sweet,sour,spicy taste.
