Baingan bharta is basically Smokey flavor roasted eggplant mash with Indian spices.

INGREDIENTS OF BAINGAN BHARTA
For Roasting:
- Eggplant/Baigan-1 large
- Oil-1tbs(apply on the egg plant)
For Bharta:
- Oil-2 tablespoons
- Mustard seeds/Sorisa-1/2tbs
- Jeera-1/2 tbs
- Garlic Cloves- 4-5 minced
- Green Chilli – 1 finely chopped
- Onion – 1 medium finely chopped
- Tomatoes -2 finely chopped
- Red Chilli Powder-1 teaspoon
- Coriander Powder-1 tablespoon
- Turmeric Powder-1/2 teaspoon
- Garam masala-1/2 teaspoon
- Salt to taste
- Roasted Baingan Pulp
For Garnishing
- 1 tablespoon Chopped Coriander
Preparation
Steps of Baingan bharta recipe:
- Wash baingan and dry it .Brush it with little oil all over and make few slits over the baingan by using knife.
- Roast on an open flame for 8-10 minutes, turning the baingan every 1-2 minutes to make sure its roasted properly on all sides.
- Once Baingan roasted properly,leave for cool down.
- Once cooled, remove the skin.
- Transfer the roasted eggplant to a bowl and mash using potato masher. Keep aside.
- Heat oil in a pan on medium heat. Once the oil is hot,add mustard seeds and jeera till spluttering .
- Add chopped garlic and green chili. Saute for few second.
- Then add chopped onion,tomato fry for 2min.
- Add turmeric powder,coriander powder,chili powder ,garam masala and salt .Mix properly.
- Cover and cook till the tomatoes are soft and pulpy.
- Add the mashed baingan and mix well.
- Cover and cook for another 3-4 minutes while stirring occasionally.
- Add chopped coriander, mix properly.
- Serve delicious smoky baingan bharta with rice,roti or paratha.
