Koshala Saga kharada/Purple amaranth fry

Koshala saga kharada or bhaja is a simple very nutritious and healthy recipe. It is made by sauted chopped purple amaranth with crushed garlic and onion and tampered with mustard seeds.

It is served as a side dish with steamed rice .But odiya people love to eat saga kharada with pakhala or watery rice with badhi chura.

Today we will learn how to make koshala saga kharada with this easy recipe with step wise pictures.

INGREDIENTS OF SAGA KHARADA

  • Koshala saga -200gm
  • Garlic cloves-8-10
  • Green chili-2 slited
  • Mustard Oil/any oil-1tea spoon
  • Mustard seeds -1teaspoon
  • Salt to taste

Preparation

Steps of saga kharada recipe:

  • Clean the kosala saga thoroughly,wash it properly with sufficient amount of water. Cut into small pieces.
  • Heat oil in a pan. Put mustard seeds till crackled. Add crushed garlic, fry it till golden brown,and green chili( silted) .
  • Add the chopped saga and salt to it. Stir well and cover it.
  • cook it till dry and soft.
  • Remove from flame and serve hot with rice. we odiya people love to enjoy with pakhala (watery rice).

  • Mustard seeds -1teaspoon
  • Salt to taste

Directions:

  1. Clean the kosala saga thoroughly,wash it properly with sufficient amount of water. Cut into small pieces.
  2. Heat oil in a pan. Put mustard seeds till crackled. Add crushed garlic, fry it till golden brown,and green chili( silted) . (you add sliced onion in this stage but my mother liked the saga kharda with out onion but love to add so much crushed garlic)
  3. Add the chopped saga and salt to it. Stir well and cover it.
  4. cook it till dry and soft.(you keep it slightly watery)
  5. Remove from flame and serve hot with rice.  we odiya people love to enjoy with pakhala (watery rice).

Note-you can use same process with lautia saaga(Green Amaranthus Leaves).
