Jackfruit Poda Pitha is a slow-cooked pitha made from pulp of ripe jackfruit and rice paste, with chopped coconut and grated coconut. The outer crust is slightly burnt, while the inside is soft and delicious.
Poda pitha is an authentic sweet delicacy of odia cuisine prepared specifically during the Raja Parba/festival in odisha,india.Poda means burnt and Pitha is a type of rice cake from eastern regions of India. In odisha you get variety of pitha’s like mango, palm, jackfruit . Mainly this fruits are available during mid June.
Raja festival is the festival of celebrating menstruation, feminity and woman hood in odisha, India. It is believed that the mother earth undergoes the annual menstruation during the first three days. On that days odia people suspand all agricultural works. All married and unmarried girls follow some rules like not cutting any vegetables, not grinding any thing. The day before of first day of Raja is called sajabaja. During this day clean house, kitchen, grinding stone. The 1st day is called pahili Raja. 2nd day is Mithuna sankranti, 3rd day is bhul daaha and 4th day is Vasumati snana.

Today we will learn how to make PANASHA PODAPITHA in a pan or kadhai with this easy recipe with step wise pictures.

INGREDIENTS OF PANASHA PODAPITHA
- Rice -2cups or you can take rice flour
- Suji-1/4cup
- Ripe jackfruit pulp or panasha rasa-2cups
- Ghee-4 tablespoons
- Jaggary/Guda-1/2cup
- Coconut/Nadia-1cup, chopped
- Salt /luna to taste
- Topping-sliced coconut
Preparation
Steps of jackfruit or panasha Podapitha recipe:
- At first clean and soak the rice with sufficient Water for 4-5hr.
- Grind the rice into fine batter. Rice will take some time to grind properly.
3.cut the ripe jackfruit into small pieces and grind into smooth paste.keep aside.
Note—For Podapitha normally kadua (very soft inner flesh when ripe) jackfruit is perfect. Here I used khajara (inner flesh is slightly hard during ripen stage) .If you have kadua jackfruit then follow below step.
Remove the seeds of jackfruit and sieve it using strainer so that you get smooth pulp and discard the fiber part.
4.Now combine smooth paste of rice and jackfruit pulp , jaggary/sugar, chopped coconut, salt and 2 tbs ghee in a bowl and mix properly.
5.Take a heavy bottom pan or kadhai,spread salt and Preheat it for 5 min over high flame.

6.Grease ghee over a mold or pan. Now put the batter into the mold or pan and topping with coconut slices.
7.Now put the mold into the heavy bottomed pan. Cover with lid and cook it 40-50 min over low flame or cook till golden brown from side .
8.Your delicious Panasha Podapitha is ready to serve. Cut into desire shape and enjoy.

- After 40min check Podapitha insert toothpick or knife in the center of pitha, if it comes out clear, then your Podapitha is ready.
- If something stick over the toothpick, then again bake it for 5min.
- Then remove it from flame carefully, cool down.
- Your delicious panasha Podapitha is ready to serve. Cut into desire shape and enjoy it as your breakfast or snacks.
