Baigan Poda/Mashed Eggplant

Baigan poda Or Begun pora is an authentic odiya and bengali dish which is made with roasted eggplant,add some chopped onion,garlic,crushed chili and seasoned with mustard oil.

The eggplant is roasted open fire on the gas flame which gives smoky flavor to the dish and by adding mustard oil takes  next level of flavor to the dish. Mustard oil is mandatory to the dish. You can roast the eggplants in an oven. It takes 20-25min.

For this dish choose big size eggplant, which helps easy roasting over flame. Select light weighted eggplant so that you find less seeds are inside the eggplant. If you want add tomatoes and roast the same way as eggplant.

It is served as a side dish with steamed rice or roti or chapati.But odiya people love to eat baigan poda with pakhala or watery rice with badhi chura.

INGREDIENTS OF BAIGAN PODA

  • Eggplant/baigan-4medium size or 2large
  • Garlic cloves-8-10
  • Onion – 1,chopped
  • Salt to taste
  • Mustard Oil-2table spoon
  • Green chili-2

Preparation

Steps of Baigan poda recipe:

  • At first wash baigan or eggplant well, cut the eggplant as shown in pic.
  • Rub the eggplants with little mustard oil and roast it open fire on the gas flame over medium flame . This will take around 10-15min.
  • After 15min remove it from flame and keep it rest for 5min.
  • Then remove the burnt skin of egg plants carefully.
  • In a bowl,take eggplants, chopped onion, crushed garlics, green chilis, mustard oil, salt, mix well.
  • Enjoy baigan poda with rice or roti or chapati.we odiya people love to enjoy with pakhala (watery rice).
