INGREDIENTS OF VEGETABLE PULAV

  • Rice-1cup
  • Onion-1sliced
  • Chopped vegetable like carrot, cauliflower, potato, green peas- 2cup
  • water-1 1/2cup
  • Green chili -2slits
  • Ginger garlic paste-1 table spoon
  • Salt to taste
  • Oil/ghee-2table spoon
  • Nutmeg powder-1/2teaspoon
  • Cinnamon powder-1/4 teaspoon        Whole spices used
  • Bay leaf-1
  • Jeera-1teaspoon
  • Clove-3-4
  • Cardamom-2
  • Star anise-1
  • Cinnamon stick-2inch

Preparation

Steps of Vegetable pulav recipe:

  • Wash and soak the rice in sufficient water for 20 minutes. Drain the water completely and set aside.
  • Heat the ghee or oil in a pressure cooker,add the whole spices and saute for 30 seconds on low heat.
  • Add sliced onion, green chillies and saute until the onion turns light brown on medium heat.
  • Then add ginger-garlic paste and saute until the raw smell disappears over low to medium heat.
  • Now add chopped vegetable again saute for 2-3 minutes on medium heat.
  • Add rice and saute for 4-5 minutes .
  • Now add water, salt ,nutmeg, cinnamon powder and mix well.
  • Cover the lid and Pressure cook the rice for one whistle on high heat and then switch off the flame.
  • Let the pressure release on its own.
  • Open the cooker and fluff the rice gently.
  • Enjoy one pot meal vegetable pulav with cucumber onion raita, papad.

Note

1.Choose long grain basmati rice for fluffy pulav. 2.you can add more vegetable like sweet corn, broccoli, beans, beetroot.
