Jackfruit seeds stir fry is an easy,healthy dish .The seeds are pan fried by coated with rice batter /rice flour with spices.
It goes well with steamed rice or pakhal bhato(watery rice).

INGREDIENTS OF JACKFRUIT SEEDS STIR FRY
- Jackfruit seeds/panasa manji- 2cups
- Oil-for frying
- Turmeric powder haladigunda-1/2teaspoon
- Red chili powder/lanka gunda-1teaspoon
- Salt/luna to taste
For rice paste
- Cumin seeds/jeera-2table spoon
- Rice/chaula-1/2cup
- Garlic cloves/rasuna-3-4
- Green chili/kancha lanka-2-3
- Water as required to paste

Preparation
Steps of jackfruit seeds stir fry recipe:
- Cut the jackfruit seeds into half length wise and remove the outer layer. Clean the seeds with sufficient water.
- In a pressure cooker, take half cup water, salt and seeds, give one whistle and leave it for cool.
- For rice paste or pithau in odia soak rice 2hr before use. In blender jar take soaked rice, green chili,cumin seeds, garlic and blend to smooth paste by adding little water. Or you can take rice flour without making paste.
- Combine rice paste, salt, turmeric powder, chili powder and boiled seeds in a bowl. Mix properly.
- For stir fry-Heat 1tbs oil in a tawa.
- Put all the jackfruit seeds,when it turns into golden brown color,flip it over medium flame.
- Serve the jackfruit seeds stir fry or panasa manji bhaja as a side dish with rice.
