Ladies finger fry is an easy,quick dish which prepared with rice batter /rice flour with spices. In odisha we called rice batter as pithau and bhaja means fry . Pithau bhaja is a famous traditional dish of odisha.
It goes well with steamed rice or pakhal bhato(watery rice).

Today we will learn how to make ladies finger fry with this easy recipe with step wise pictures.

INGREDIENTS OF LADIES FINGER FRY
- Ladies finger/bhindi -250gm
- Oil-for frying
- Turmeric powder/haladigunda-1/2teaspoon
- Red chili powder/lanka gunda-1teaspoon
- Salt/luna to taste
For rice batter
- Cumin seeds/jeera-2table spoon
- Rice/chaula-1/2cup
- Garlic cloves/rasuna-3-4
- Green chili/kancha lanka-2-3
- Water as required to paste

Preparation
Steps of ladies finger fry recipe:
- Wash the bhindi/ladies finger throughly and pat them dry completely before use to avoid slimy by using paper towels or soft cloth.

- Remove the top and bottom tip of bhindi and cut into 2equal halves length wise.

- For rice batter or pithau in odia –soak rice 2hr before use. In blender jar take soaked rice, green chili,cumin seeds, garlic and blend to smooth paste by adding little water.

- Combine rice batter, salt, turmeric powder, chili powder and slited ladies finger in a bowl. Mix properly.

- For shallow frying-Heat 1tbs oil in a tawa.
- Fry the coated bhindi on the tawa by adding 1tbs oil over medium flame, till golden brown from both side.
Put bhindi Fried one side Fried both side
- Serve the ladies finger fry or bhindi pithau bhaja as a side dish with rice.
