Burnt Pumpkin 🎃 Cake/Boitalu Podapitha

Poda pitha is an authentic odia cuisine prepared specifically during the Raja Parba/festival in odisha.Poda means burnt and Pitha is a type of rice cake from eastern regions of India.

Boitalu Poda Pitha or pumkin podaPitha is a slow-cooked pitha made from pumpkin and rice paste, with chopped coconut and or grated coconut, some crushed ginger. The outer crust is slightly burnt, while the inside is soft and white.

Today we will learn how to make Boitalu Or kakharu Podapitha in a pan or kadhai with this easy recipe with step wise pictures.

INGREDIENTS OF BOITALU PODAPITHA

  • Pumkin/boitalu-2cups(cut into cube)
  • Rice /Chaula-2 cups
  • Ghee-4tbs
  • Jaggary/Guda-1cup
  • Ginger/Ada-1inch, chopped
  • Coconut/Nadia-1cup, chopped
  • Salt /luna to taste
  • Topping-sliced coconut

Preparation

Steps of Boitalu Podapitha recipe:

  1. At first clean and soak the rice with sufficient Water for 4-5hr.

2.Boil the pumpkin in a pressure cooker until to get 2 whistle without adding water. Cool down and keep aside.

3.In the mixing jar, take soaked rice, boiled pumpkin and add half cup water, make smooth paste.

4.Now combine smooth paste of rice and pumpkin , jaggary, chopped ginger, chopped coconut, salt and 2 tbs ghee in a bowl and mix properly.

5.Take a heavy bottom pan or kadhai, put 2 tbs ghee and spread over the kadhai. Preheat it for 5 min over high flame.

6.Now put the batter in the kadhai, cook it 40-50 min over low flame or cook till golden brown from side and topping with sliced coconut.

7.Your delicious boitalu Podapitha is ready to serve. Cut into desire shape and enjoy.
