Gujiya is a deep-fried dumpling made with suji (semolina) or maida and stuffed with a mixture of sweetened khoya (milk solids; also called mawa) and dried fruits or coconut. The dish is perfect during the Festival of colors “Holi” and Festival of Lights “Diwali”.

Today we will learn how to make Gujiya with coconut stuffing with this easy recipe with step wise pictures.

INGREDIENTS OF COCONUT GUJIYA
For Stuffing:
- Coconut – 1 whole(finely grated)
- Jaggery/Sugar – 1 cup
- Cashew,almond powder – 1/4 cup
- Cardamom Powder – 1 teaspoon
For Outer Covering:
- All purpose Flour – 2 cups
- Butter / Ghee – 2 tsp
- Vegetable Oil – For deep frying
Preparation
Steps of Coconut gujiya recipe:
Coconut Stuffing:
1`.Take a wide bottomed pan ,Put desiccated coconut or the grated coconut .

2.Fry it approximately for 3-4 mins.
3.Add jaggery to the semi-fried coconut and saute it for 2-3 mins.

4.Add the cardamom powder,cashew nut almond powder,stir and keep aside.



For the Outer Covering:
1.Take all purpose flours in a wide bottomed vessel.Add 2 tablespoons of butter/ghee.

2.Rub the flour along with the butter/ghee to bring it to a proper consistency.
3.Slowly add the water to the flour and knead the dough.

For Assembling and frying:
1. Make small sized balls from the dough.

2.Roll the balls to make Puri.
3.Add the stuffing to the center of the Puri .

4.Gently fold the Puri, bringing two edges together.
5.After folding, seal the edge or use different moulds available in the stores.
6.Take a wide bottomed pan and add oil for frying.
7.Put gujiya in the oil .
8.Fry it till golden brown on both sides, place it paper towels to remove excess oil.
