Aloo parval is one of my favorite side dish , in which parval (pointed gourd) and aloo are boiled and mashed and cooked with some spices.It goes well with rice ,roti.

INGREDIENTS OF ALOO PARVAL BHARTA
For Boiling:
- Pointed gourd/potol-4-5
- Potato/aloo-2-3
For Bharta:
- Oil-2 tablespoons
- Mustard seeds/Sorisa-1/2tbs
- Jeera-1/2 tbs
- Garlic Cloves- 4-5 minced
- Green Chilli – 1 finely chopped
- Onion – 1 medium finely chopped
- Tomatoes -1 finely chopped
- Red Chilli Powder-1 teaspoon
- Coriander Powder-1 tablespoon
- Turmeric Powder-1/2 teaspoon
- Garam masala-1/2 teaspoon
- Salt to taste
- Mashed parval and aloo
For Garnishing
- 1 tablespoon Chopped Coriander
Preparation
Steps of Aloo Parval Bharta recipe:
- Boil the whole unpeeled parval and alooin Pressure cooker by adding 2 cups water till soft for easy mashing.
- Let the boiled parval,aloocool down. Squeeze out excess water from parval and remove the skin of potato.
3.In a bowl take potato and parval, Mash roughly.keep aside.
- Heat oil in a pan on medium heat. Once the oil is hot,add mustard seeds and jeera till spluttering .
5.Add chopped garlic and green chili. Saute for few second.
6.Then add chopped onion,tomato fry for 2min.
7.Add turmeric powder,coriander powder,chili powder, garam masala and salt .Mix properly.
8.Cover and cook till the tomatoes are soft and pulpy.
9.Add the mashed aloo parval and mix well.
10.Cook for another 3-4 minutes while stirring occasionally.
11.Garnish with chopped coriander leaves.
12.Serve delicious Aloo parval bharta with rice,roti or paratha.
Note:- Use tender green parval with small white seeds. Avoid the ones with yellowing/tough skin or seeds.
