INGREDIENTS OF CARROT PORIYAL
- Carrots – 3 to 4 no.(medium sized)
- Salt – to taste
- Grated coconut -2 to 3 tbsp
For Seasoning:
- Oil – 2 to 3 tsp
- Mustard seeds – 1 tsp
- Cumin seed-1tsp(optional)
- Dry chili -2(optional)
- Green chillies – 2 to 3 (chopped /slited lengthwise)
- Chana dal and Urad dal – ½ tsp
- Curry leaves – 1 sprig
Preparation
Steps of Carrot Poriyal recipe
1.Wash, peel the skin and chop the carrots into bite sized pieces. Keep aside.
2.Heat oil in a kadai; add all the ingredients under “For seasoning” one by one.
3. Now add chopped carrots, salt .Give it a mix.
4.Close the pan with a lid and cook till the carrots in a medium flame till it becomes soft.
5.Add fresh grated coconut and mix properly. Switch off the gas.
6.Serve Carrot poriyal with rice.Enjoy
